Total Time Required: 30 minutes
Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients:

  • 1 pound lean ground beef
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 8 ounces brown mushrooms, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon cornstarch
  • 1 cup beef broth
  • 8 ounces provolone cheese slices, chopped (use 6 ounces if you prefer it less cheesy)
  • 6 brioche hamburger buns

Method:

1. Brown the Ground Beef:

  • In a large cast iron skillet over medium-high heat, add the ground beef.
  • Allow the beef to cook without stirring for about 2-3 minutes, letting a deep brown crust form on the bottom.
  • Once the crust has formed, break the beef apart with a spatula or wooden spoon.
  • Continue cooking and stirring occasionally until about 50% of the meat has a deep brown crust, giving it a rich flavor. Drain excess fat if necessary, then set the browned beef aside.

2. Sauté the Vegetables:

  • In the same skillet, melt the butter over medium heat.
  • Add the diced onion, green bell pepper, and minced mushrooms.
  • Sauté for 5-7 minutes until the vegetables are softened and the onions are translucent. The mushrooms should release their moisture and then begin to brown.

3. Combine the Beef and Vegetables:

  • Return the browned ground beef to the skillet with the sautéed vegetables.
  • Stir in the ketchup and Worcestershire sauce, making sure everything is well combined.
  • Season with kosher salt and freshly ground black pepper.

4. Thicken the Mixture:

  • In a small bowl, mix the cornstarch with the beef broth until dissolved.
  • Pour the cornstarch mixture into the skillet with the beef and vegetables.
  • Stir well and cook for 2-3 minutes, allowing the sauce to thicken.

5. Add the Cheese:

  • Once the mixture has thickened, reduce the heat to low.
  • Add the chopped provolone cheese and stir until melted and fully incorporated into the beef mixture.

6. Toast the Buns:

  • While the cheese is melting, lightly toast the brioche hamburger buns. You can do this in a toaster, under a broiler, or in a separate pan over medium heat.

7. Assemble the Sloppy Joes:

  • Spoon the cheesy beef mixture onto the bottom halves of the toasted brioche buns.
  • Place the top halves of the buns on top of the mixture.
