Ingredients

  • Potatoes: 6 large, peeled and sliced into half-inch rounds
  • Olive oil: 2 teaspoons
  • Sea salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • Onion powder: 1/2 teaspoon
  • Paprika: 1/2 teaspoon
  • Cheese: 1/2 cup grated, preferably cheddar, mozzarella, or a combination of the two
  • Fresh parsley: 2 teaspoons, chopped
  • Fresh chives: 2 tablespoons, chopped (optional, for garnish)

Instructions

  1. Preheat the Oven and Prepare the Baking Sheet:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly coat it with olive oil to prevent sticking.
  2. Prepare the Potatoes:
    • Peel the potatoes and slice them into rounds that are about half an inch thick.
    • Place the potato rounds in a large bowl. Drizzle them with olive oil, then sprinkle evenly with sea salt, black pepper, onion powder, and paprika. Toss the rounds to ensure they are thoroughly coated with the seasonings.
  3. Arrange the Potato Rounds:
    • Spread the seasoned potato rounds in a single layer on the prepared baking sheet. Make sure they are not overlapping to allow for even cooking.
  4. Bake the Potatoes:
    • Place the baking sheet in the preheated oven.
    • Bake the potato rounds for about 20-25 minutes, or until they start to turn golden brown and are tender when pierced with a fork. Flip them halfway through baking to ensure both sides are evenly cooked.
  5. Add the Cheese:
    • Once the potato rounds are golden and crispy, remove them from the oven.
    • Sprinkle the grated cheese evenly over the tops of the potato rounds.
    • Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove the potato rounds from the oven and sprinkle them with fresh parsley and chives (if using).
    • Let the potato rounds cool slightly before serving.

Serving Suggestions:

  • These baked potato rounds can be served as an appetizer with sour cream or a dipping sauce.
  • They also pair well with grilled meats, burgers, or even a fresh salad.

Enjoy your delicious, cheesy baked potato rounds!
